How To Make Thiruvathirai Kali Recipe
To make Thiruvathirai Kali Recipe, Place a pan in the stove and keep it medium flame. Add a cup of raw rice into it and fry till golden brown. Switch off the stove.
After it cools down, put it in a blender and make it into a coarse powder.
Place the pan again and keep it in medium flame and put the jaggery into it with a little water. It will melt in minutes and stir well.
Drain the jaggery water using a filter to remove the impurities in it.
To make jaggery mix for thiruvathirai Kali recipe, Pour two cups of water in the pan and keep it in high flame.
When it boils, add the coarse rice powder to it and stir well and close it with a lid.
Let it cook it medium flame for 10 minutes approximately.
Open the lid in between to stir the flour to check out for any lumps here and there.
After 10 minutes, open the lid and add the melted jaggery, cardamom powder and grated coconut into the mixture and mix everything well.
Keep stirring it for a few minutes {5 mins approx} and now transfer it to a container.
Take a pressure cooker and pour a glass of water into it and place the container inside the cooker and close it with a lid.
Pressure cook for three whistles.
Take the cooker from the stove and place a small pan in it and pour half a cup of ghee into it and once it melts, add the cashews and fry till golden brown.
Open the pressure cooker and take out the kali. Now add the roasted cashews to it along with the ghee. Give a thorough mix and serve it hot over a banana leaf with its traditional combination `Ezhu Kari Kootu`.
