Ingredients Required To Make Shavige Payasa Recipe

 1 Cup Of Vemicelli Shavige/Semiya
 4 cups Of Full Fat Milk
 1 ½ cups Sugar
 1 tsp Elaichi/Cardamom Powder
 8 Nos Of Cashew Nuts
 10 Nos Of Raisins
 4 Strands Of Saffron
 1 Bit Of Nutmeg
 1 Cup Of Water
 1 tbsp Ghee

How To Make Shavige Payasa Recipe

Roast The Dry Fruits And Shavige

To make shavige payasa, heat a saucepan and drop a tablespoon of ghee in it.

When it starts to melt, tip in the measured quantities of cashews and roast them till golden brown.

Add in the raisins and when it pops up just drop a piece of nutmeg to it.

Turn off the stove and just crush the nutmeg using a mortar and pestle while it is still hot and keep it aside.

Transfer these roasted ingredients to a plate and add in a cup of shavige/semiya to the pan.

Stir in for a while continuously till they turn golden brown.

Make The Payasa

Heat a skillet and pour in four cups of milk in it.

After two or three minutes when it comes to a boil just blend in the roasted shavige to it and splash in a little water and stir well.

Let it boil for ten minutes approximately.

When the shavige gets cooked up, just add in the measured quantity of sugar with a nice stir.

Let it boil for about ten minutes and when it reaches the right consistency and turns aromatic, just toss over the roasted nuts along with the nutmeg powder to the payasa.

At last, tip in the saffron strands and stir in for five minutes approximately.

Tit Bits :

  • While choosing the semiya buy payasa shavige. It is available in all Indian stores and if you buy roasted shavige you can directly add it to the milk.
  • Use full fat milk for making the payasa to get the best result.
  • Always boil the milk well before adding it to the shavige in order to avoid curdling by any chance.
  • Do not add it too hot. Let it cool for a while just before adding.
  • You can add some condensed milk if you want it to be richer.
  • We add a pinch of nutmeg powder for added flavor and it is quite optional.
  • Similarly, we add a few strands of saffron to enhance its flavor and it is also optional.
  • Usually, shavige payasa tastes the best when it is quite thick and creamy.
