A Note On Akki Roti:

Every corner of India has its own breathtaking gastronomic history and the state of Karnataka confers a host of numerous dishes which are primitive and exemplary of its own kind. Karnataka Cuisine is supreme in fusion of flavors and its nuance in merging the blend of Shadhrasa (six tastes)  is spectacular which is bound to inspire any epicure instantly. With millets and grains being the staple food of Karnataka, we have plenty of dishes that are primarily made of jowar, ragi, bajra, foxtail, little millet, buckwheat and kodu which are high in protein, iron, fiber and amino acids which are essential for our body. Both major and minor millets are equally consumed in Karnataka and they are considered as the state's much utilized nutri-cereals. With millets being the ancient food of India, many states have been prolific in the production and consumption of age old millets in which Karnataka occupies a prominent place. Starting from grains to nuts, millets and cereals this state has a enormous culinary history of varied amalgamation of foods and flavors with a balanced usage of major and minor nutrient rich dishes. This Akki Roti is an astounding flatbread with rice flour as its key ingredient and most of the time it is spruced up with vegetables and spices to make it all the more delectable. We have varieties of akki roti like plain akki roti, carrot akki roti,  akki roti, masala akki roti, onion spinach akki roti and so on. Here we are going to see the recipe of plain akki roti with just rice flour, salt and ghee. With suitable accompaniments like peanut podi chutney or red chili coconut chutney, it just tastes like heaven.

Ingredients Required To Make Udipi Special Akki Roti Recipe :

 1 Cup Of Rice Flour
 1 Cup Of Water
 ¼ tsp Salt
 3 tbsp Cooking Oil

How To Make Akki Roti Recipe :

Prepare The Dough

Heat a wok and pour in two cups of water into it and tip in a little salt. Add a teaspoon of cooking oil and stir well and let the flame be in high mode. When it begins to boil, lower the flame and strew in two cups of rice flour gently while stirring continuously on one hand. When the flour gets absorbed by the water just squirt in for a few seconds and put the lid on. Just after two minutes, open up the lid and transfer the cooked up flour into a bowl and knead on while it is still hot. Dip your fingers in water to manage the heat and roll it into a smooth dough. Crush the crumbles that come in between and ensure that the dough is smooth and even.

Heat a tawa and smear a little oil over it and let the flame be in medium mode. Take a small portion from the dough (in the size of a lemon) and roll it between your palms and place it over a greased banana leaf and pat with your fingers in a circular motion to get it round and even. Gently, flip it over the heated tawa and smear oil around and wait for a minute to get it cooked. Just after a while, alter the flame to high mode and slowly turn over the roti and press with a damp cloth while rotatiing it in the anti clockwise direction so that it bulges like a chukka roti. When both the sides are cooked up well and have roasted golden brown spots here and there, take it out and place it over a plate.

Serve Hot

Dab it with a little ghee and serve the Akki Roti hot with a tomato gojju or mango thokku along with a sizzling cup of coffee.

Some Useful Observations:

* Store bought ready made rice flour will give a rough finish to the dough whereas home made rice flour will give a smooth texture to the dough. Just take a cup of raw rice and soak it in water for a minimum of fifteen minutes and dry it in a muslin cloth after draining the water thoroughly. Dry it either indoors or under the sun for a while and after it dries up completely make it into a fine powder using a blender. You can prepare it in bulk and keep it as a multipurpose flour in your pantry.

* You can either make it plain or add veggies to it. If you add greens or veggies make the dough just when you need it because if you make it in advance it may tend to get damp. The onion and gourds may release moisture which may losen up the dough and change the texture of it.

* With this recipe as a basic format, you can try out any number of Akki Roti varieties, according to the ingredients available at home and of course up to your choice and creativity.

* In some parts of Karnataka, they add coarse peanut powder to the rice flour for added nutrition.

* You can add  a quarter or even half a cup of left over cooked rice in the dough to make the Akki Roti softer. Blitz for a second or two in a blender without water before adding. In fact, in most of the households they used to add the leftover rice as it serves a dual purpose.

* Just ensure that the rice flour dough is neither too thick nor too thin as you just need the right consistency to dab it on.

* You can even use parchment paper, foil sheet or plain polythene to make akki roti in case if you do not have banana leaf or thin white muslin cloth.

* It is always better to sift the rice flour once with a sieve before usage in order to get it smooth while kneading.

* You can add any greens like drumstick, dill and cilantro leaves to the dough and grate any number of veggies like carrots, gourds, cabbage and cauli flower.

* If you want to make it more colorful and nutritious for kids you can add grated fresh beetroots to the flour.

* You can make the Akki roti with oil, ghee or butter according to your choice and liking.

* You have to serve it only hot as it may tend to harden after a while.
