Rava Kheer is one of the celebrated classic dessert that originated from the Indian subcontinent which is popular all over the country and called in various names as Sooji Kheer and rava payasam. It is  commonly prepared during festivals like Eid, Janmashtami, dusheera and  for other similar festivals and special occasions. Semolina or Rava is not only versatile but it is also very quick and easy to prepare and this Rava Kheer is a milk based pudding made of semolina and milk and spruced up with roasted nuts.

Milk based Kheer is an all time favorite for many people in India, and this Rava Kheer falls under that category undoubtedly. Being subtle in flavor and soft on the palates, this Rava Kheer manages to give an astounding taste and certainly soothes you in the very first slurp. As we add hot boiled milk in the roasted semolina this amazing dish is done within minutes with just a few ingredients available at home. The blend of sooji and milk always looks royal with its pearly white shimmer and the tantalizing grainy texture and mostly given to kids as porridge beacause of its fineness and ease of digestibility.

Ingredients Required To Make  Rava Kheer / Rava payasam Recipe

 ¼ Cup Of Rava / Semolina (Bombay Rava)
 ½ Cup Of Sugar
 ½ tsp Cardamom Powder
 1 Cup Of Milk
 1 tbsp Cashewnuts
 1 tbsp Rasins
 1 tbsp Ghee
 1 Bit Of Nutmeg

How To Make Rava Kheer / Rava payasam Recipe

Roast The Dry Fruits

Heat a skillet and after a few seconds tip in a tablespoon of ghee and when it starts melting throw in a piece of nutmeg and roast it.

Take it out in a minute and keep aside. Then drop in the cashews and when it starts to turn golden brown add in the raisins and when it pops up lower the flame and transfer these roasted ingredients to a plate.

Make The Rava Payasam

Place the skillet again in the stove and after one or two seconds, tip in a quarter cup of semolina and stir in.

Roast it for two minutes until it turns aromatic and transfer it to a plate and pour in one and a half cup of water and let it boil for a while.

Just after five minutes approximately, squirt in the roasted semolina while stirring continuously in order to avoid the formation of lumps.

When the semolina is cooked up well, add half a cup of sugar and the semolina will start getting diluted as the sugar melts.

After stirring for a while, pour in a cup of milk and alter the flame to high mode and let it boil.

When it reaches the desired consistency, just add half a teaspoon of cardamom powder and toss over the roasted nuts too except the nutmeg.

Crush the roasted nutmeg and add it along and when it becomes aromatic just turn off the flame.

Now the luscious Rava Payasam / Kheer is ready to eat.

After a while, transfer it to a serving bowl and serve warm along with a savory.

Tips and Tricks Rava Kheer / Rava payasam Recipe

  • Here I have given you the basic version of Rava Kheer and adding a few strands of saffron and some more dry fruits are absolutely optional.
  • You can give it as a regular morning porridge for kids and it has been in practice in India since several years.
  • When it cools down, it may tend to become thick and therefore dilute it with a little warm milk before serving.
  • The quantity of sugar can be adjusted depending upon your needs and preference.
