Dal Dokli recipe is a traditional Rajasthani delight known for its rich taste and enticing aroma. It is famous in Gujarat and Maharashtra and also called as Varan Pal or Chakolya. It is a sumptuous one pot dish which was invented by the Rajputs during the Mughal reign. Dal dokli recipe was founded by the palace cook of a king , who tried to bring out a wholesome meal when there was a crisis. He prepared a dal with left over rotis and added some spices in it. It eventually turned out to be an exotic dish which took several version in course of time and became popular all over the country. Now the modern version includes vegetables and greens to make it all the more delicious and especially in Gujarat they add methi leaves which makes it healthy and more flavorful.

The Rajasthani Dal Dokli is quite different from that of the Gujarathi version and both differ in ingredients and preparatory method as well. In Uttar Pradesh and Bihar it is still more different wherein they use kokum ( a kind of tamarind) to bring out the tanginess. Some regions have non onion no garlic versions which they prepare during fasting times. Basically, Dal Dokli is  a spicy tangy dal curry made by boiling wheat doklis in Tuvar dhal mixed up with some Indian condiments. The tepla strips when dipped in aromatic dal tastes extraordinary with a drizzle of ghee and just tantalizes our taste buds with its sweet and tangy combination.

Ingredients For Tepla
 1 Cup Wheat Flour
 1 tbsp Gram Flour
 2 tsp Carom Seeds
 2 tsp Ghee
 Required Amount of Salt

 2 cups Tuvar Dal
 4 cups Water
Ingredients For the Tadka
 2 Nos Of Tomato
 2 tbsp Ghee
 1 tsp Red Chili Powder
 2 pinches Asafoetida
 2 Nos Dried Red Chillies
 1 tsp Cumin Seeds
 1 tsp Coriander Powder
 ½ tsp Turmeric Powder
 1 tsp Curry Leaves
 1 tbsp Coriander leaves
 Required Amount Of Salt
 Required Amount Of Water

How To Make Dal Dokli Recipe

Cook The Dal For Dal Dokli Recipe

To make dal dokli recipe, take two cups of tuvar dhal in a vessel and pour in four cups of water and place it inside a cooker and pressure cook for three whistles approximately. When it cools down, just open up the lid and ensure that the dhal is mushy and keep it aside.

Make The Tepla For Dal dokli Recipe

Take a bowl and add a cup of wheat flour and one tablespoon of gram flour to it.

Tip in two teaspoons of carom seeds along with the required salt.

Splash in a little water and start kneading the dough by adding a little ghee.

Knead for a minute or two until it becomes soft and close it with a cloth for twenty minutes approximately.

After some time, take out the cloth and knead it one again to make it still more soft.

Make two or three tepla out of the dough using a chakla(traditional roti maker) and cut them into strips of two inches size.

Cut them in the shape of diamonds and make strips out of the whole tepla.

Heat a pan in the stove and pour in two cups of water.

When it comes to a boil, drop in the tepla strips one by one gently into the water.

Let it get cooked for some time and keep stirring them every now and then using a slotted spoon, so that they do not stick with each other.

Let them boil till the roti strips pop up to the top.

When all the strips get cooked and pops up, take it out with the slotted spoon and place it over a plate and keep aside.

Tips and tricks for making Rajasthani Dal Dokli Recipe :

  • Though traditionally tuvar dhal is being used for Dal Dokli, you can also use masoor dal and moong dal for a change.
  • You can also add any vegetable you use regularly for dal and similarly you can add any greens like spinach and methi leaves. Blanch these greens and vegetables when you saute the tadka.
  • You can also have this dish with rice if you desire and it tastes awesome with basmathi rice.
  • Always serve this dish hot and sprinkle some finely chopped onion, coriander leaves and a dash of lemon over the dal dokri just before every serving.
