Poondu Thokku is a tantalizing fiery accompaniment that originated from the Indian subcontinent and it is made of fresh garlic cloves. Ingredients Required To Make Poondu Thokku Recipe

 1 Cup Of Garlic Pods
 12 Nos Of Dried Red Chilies
 1 tsp Tamarind
 1 Pinch Of Asafoetida
 3 tbsp Sesame Oil
 Required Amount Of Salt

How To Make Poondu Thokku Recipe

Peel of the skin from the garlic pods and drop it into a small blender.

Add ten to twelve dried red chilies along with the required salt.

Just add a teaspoon of tamarind and sprinkle a few drops of water and blend it into a smooth paste.

Heat a saucepan and tip in three tablespoons of sesame oil and after few seconds toss over a teaspoon of mustard seeds to it.

When it splutters just add a pinch of asafoetida powder just squirt in the blended mixture to it.

Stir in for a minute or two in medium flame and when the oil starts oozing out at the sides and turns aromatic just switch off the flame.

Now the lip-smacking Poondu Thokku is ready to eat. Serve it along with soft Malipoo Idlis or crisp dosas along with a cup of filter coffee.

Tips And Tricks  To Make  poondu Thokku Recipe

  • There are quite a lot of varieties of garlic and the most popular ones are Naatu Poondu and Malai Poondu. If you want the Poondu Thokku to be more fiery you can choose the former and if you want it to be moderately pungent, opt for the latter.
  • Similarly, choose kashmiri red chili if you want it to be bright red and colorful and go for Rasam Or Laal Maas if you like it the spicy way.
  • Sesame oil is the best to temper Poondu Thokku and next comes the Groundnut oil but if you cannot get these two, you can use any other cooking oil which you use regularly.
  • You can refrigerate for a minimum of one week and use as a dip for Appam, Idiyapam, kuzhi paniyaram, mor kali, medu vada, bonda, pakora and any other fries like momos or french fries.
  • Use rock salt and temper it in cast Iron kadai to get an authentic taste and flavor. Just try it once and see the difference.
  • While you temper, just turn off the heat within a minute or two to retain its flavor to the fullest.
