Chicken korma Recipe originated in India which consists of chicken, spices and yoghurt. It is a semi solid Gravy which is taken with rice and as well as roti, idli and dosa.

It's appetising look and delicious nature attracts people from all over the country. Actually Chicken Korma Recipe originated in India during the Moghul period i,e, during the 16th century B.C. The aroma of korma is exclusive as we use a variant of spices in this dish.In ancient times, this korma was prepared in a mud pot using charcoal stove. Nowadays we use metal vessels and gas stove or Induction stove to prepare this.

The word `korma` is derived from the urudu word `quorma` or `kormah` which mens `braise` which refers to the cooking technique used in the dish. However, Indian korma differs from the Turkish korma in the culinary sense.

In this korma chicken is usually soaked in curd, yoghurt or cream to enhance the taste of it. It can either be made creamy or spicy depending upon our taste and preference. In some varieties of korma, we can see vegetables mixed along with the chicken.

Chicken Korma Recipe is prepared using high heat, medium and low heat and the final stage of heat is called `dum`.

At the final stage of cooking, ghee or butter is heated and additional spices are added and combied with sauce to get an appetizing flavor. The typical Indian flavor is retained by using the Indian Bay leaf and dried coconut called `copra`.

Ingredients Required For Making Chicken Korma Recipe

For Marination
 500 g Chicken
 1 cup Curd or Yoghurt
 1 tsp Turmeric Powder
 2 tsp Ginger Garlic Paste
 2 tsp Chilli Powder
 Salt as required
For Making the Paste
 2 nos Onions
 1 cup Curd
 10 nos Cashews
 2 nos Cardamom
 5 nos Almonds
For Korma Gravy
 2 Sliced Green Chilli
 1 nos Cardamom
 1 nos Bay Leaf
 2 nos Clove
 1 inch Cinnamon
 1 tsp Chilli Powder
 2 tsp Coriander Powder
 ½ tsp Garam Masala
 2 tbsp Coriander Leaves
 Water and Salt as required

How To Make Chicken Korma Recipe

Chicken Korma Recipe - Marination for Chicken Korma

To make chicken korma, Clean the chicken thoroughly and then cut it into small pieces and put it in a broad vessel.

Add the measured quantity of curd or yoghurt, turmeric, chilli powder, garam masala, ginger garlic paste and a little salt to it and mix up well.

Close it with a lid and let it marinate for a few hours.

To make chicken korma, switch on the stove and heat a pan (preferably a thick bottomed one) and add a little oil to it.

Once it is heated, put the diced onions and a cardamom and fry it till you get the aroma of cooked onions

Similarly add the cashews and almonds and roast it nicely.

Switch off the stove and let it cool for sometime.

Transfer everything to a blender and grind it along with a cup of curd or yoghurt.

Now the paste for chicken korma is ready to make chicken korma.

To make chicken korma, Heat the same pan again and put 2 tbsp of cooking oil in it

Saute it with a cardamom, bay leaf, cinnamon, clove and green chilli.

Now add the marinated chicken and mix slowly and set the flame into medium mode.

Let it cook until the raw smell of the chicken goes away.

Now add the onion paste and add the required quantity of water and stir well.

Slowly add the measured quantity of chilli powder, coriander powder, salt and garam masala one by one.

Close the pan with a lid after adding a little water

Let it cook until the chicken becomes soft and tender.

Now and then open the lid and give a stir.

Cook till you get a thick consistency and a nice aroma.

Now the chicken korma is ready and you can switch off the stove.
