Thepla is a quintessential Gujarathi dish known for its delicately fragrant aroma and warm spicy flavour. It is one of the amazing dishes that the Gujarathi Cuisine has to offer. Thepla is a kind of roti that is spruced up with lush green fenugreek leaves and other Indian spices. It is a simple dish made exotic just with a handful of ingredients which goes well with any Indian sabzi. It is made with whole wheat flour which is nutritious and has low glycemic index.

The secret of Thepla lies in mixing the right proportion of spices and fenugreek leaves and in the kneading of its dough which makes its texture soft and firm as well. It is an indispensable dish in any Gujarathi household and they prepare it in bulk and use for days. It is the best opted lunch for a party or a picnic. Accompaniment is not a necessary for this versatile dish and generally it is taken with an achaar, chhunda or curd. You can add til, jeera seeds, and carom seeds to make it all the more palatable. Similarly, the dough can be kneaded with water, milk or curd depending upon its usage. The addition of spices like cumin powder, red chilli powder and coriander powder just enhances its flavour and gives a sizzling sensation when taken fresh and hot. The smell of groundnut oil or ghee wafting out of the theplas just makes you irresistible.

Travel and Thepla go hand in hand in Gujarat and it is customary to pack their lunch and snacks whenever they plan for a tour. Commonly, they prepare sada theplas or masala theplas and pack in a large round shaped tiffin box which they use generally for storing theplas. They generally pack crispy potatoes, aloo vada, dahi and jeera powder and onions along with it. It is quite interesting to watch how they arrange their dinner plate so orderly in the midst of crowd and chaos. They would place three to four rotis in a circular plate and would place a cup of curd and sprinkle some jeera powder and salt to it. Then they would keep a piece of raw onion and a spoon of green chili pickle or chhunda neatly placed at the sides of their plates. Either they would wrap it in aluminium foil or place it as such in tiffin boxes covered with a muslin cloth. The aroma coming out of the plates would make you irressitible to take a bite instantly.

Ingredients Required To Make Gujrati Thepla Recipe

 1 Cup Of Wheat Flour
 ¼ Cup Of Besan Flour
 1 tsp Red Chilli Powder
 1 tsp Coriander Powder
 ½ tsp Turmeric Powder
 ½ tsp Cumin Powder
 ½ tsp Sugar
 2 pinches Asafoetida
 2 tbsp Curd
 ½ Cup Of Methi Leaves
 2 tsp Carom Seeds
 Salt As Required
 Water As Required
 6 tbsp groundnut oil

How To Make Gujrati Thepla Recipe

Make The Dough To Make Thepla Recipe

To make thpla recipe, take a cup of wheat flour in a bowl and add a quarter cup of besan flour to it.

Tip in a teaspoon of red chilli powder and coriander powder each.

Similarly, sprinkle half a teaspoon of turmeric powder and cumin powder each.

Add in half a teaspoon of sugar and two pinches of hing/asafoetida to it.

Blend in two tablespoons of curd and add the required salt to it.

Finally, add in two teaspoons of carom seeds and half a cup of fresh methi leaves to it.

Splash in some water and make smooth dough by adding the required amount of groundnut oil.

Knead it for one or two minutes until it becomes smooth and soft.

Cover it up with a soft muslin cloth and keep it for a while.

Make The Thepla

After fifteen minutes, take the dough and knead it again.

Take a small portion from the dough and roll it into a ball in the size of a lemon.

Flatten it and dust it over the wheat flour and place in over the chakla (rolling board).

Using the rolling pin, just flatten the tepla dough to a circular shape in the size of a small plate.

Heat a tawa, and toss over the flattened tepla dough and let it get cooked for a few seconds.

Just after a few seconds, when it starts to pop up a little, just flip the thepla to the other side and smear a teaspoon of oil all around it.

After a few seconds just flip to the other side and smear the oil again on this side.

Press the Thepla with a spatula now and then and maintain the flame in medium mode.

When both the sides gets crispy just take it out and similarly make the other Theplas.

Serve it hot or at room temperature with a cup of curd mixed with cumin powder or with a cucumber salad.

Tips And Tricks To Make Gujrati Thepla :

  • You can add any other millet flour other than besan to make it more nutritious.
  • If you plan to have the Thepla for three to four days then knead the flour without water. Instead, you can add boiled milk and knead the flour thick and firm.

  • You can also add white sesame seeds in place of carom seeds or you can even add both.
  • Similarly, you can use ghee, sesame oil or any other cooking oil that you use regularly for making Thepla.
  • You can store the extra theplas in the room temperature for a day or two and in the refrigerator for four to five days and reheat it in a tawa whenever you want it.
  • It can be served as such or can be accompanied by dhal, sabzi or curry.
  • Use a lavish spread of oil or ghee to prevent the roti from turning dry and hard.
