Vadacurry Recipe is a south Indian recipe which is very famous in the districts of Tamil Nadu, for example : Madurai, Tirunelveli and Chennai.

How to make vadacurry recipe

 1 cup Chana Dal
 2 Onions
 4 Tomatoes
 1 tsp Ginger Garlic Paste
 1 Bay Leaf
 2 Cloves
 1 inch Cinnamon
 ½ tsp Garam Masala
 2 tsp Fennel
 3 tbsp Cooking Oil
 1 twig Curry Leaves
 a handful of coriander leaves
 1 inch Ginger
 5 Cloves Garlic
 1 tsp Turmeric Powder
 1 tsp Chili Powder
 2 tsp Coriander Powder
 1 tsp Fennel Powder
 1 cup Grated Coconut
 5 Cashews
 1 tsp Fried Gram
 8 Red Chilis
 Salt as required

To Make Vadacurry, Clean and wash the chana dal and soak it for 4-5 hours approximately.

Now strain the water and add red chilli, curry leaves, fennel ,grated coconut, ginger, garlic, clove and salt to it and grind it into a coarse paste.

Now make small even patties out of it and keep it aside.

Heat oil in a pan and deep fry the prepared patties one by one.

When one side is cooked, flip to the other side and make it crisp.

Spread a tissue paper over a plate and place the fried patties on it.let it cool.

Meanwhile, prepare the gravy for vadacurry.

Heat a shallow pan, pour 3 tbsp of cooking oil.once it is heated, put a spoon of mustard seeds to it. Once it splutters, put a spoon f fennel seeds, curry leaves, and minced ginger and garlic to it. Now add a piece of clove and a bay leaf.

When you get the aroma of garlic and ginger, add 3 finely chopped onions to it. When it gets a golden brown colour, add 5 finely chopped tomatoes and saute it.

Add the required amount of salt, a pinch of turmeric powder, a spoon of red chilly powder,2 spoons of corrinader powder, a spoon of garam masala to it and a a little water and mix thoroughly.

Meanwhile, grind a cup of gated coconut, fried gram, and cashews to a fine paste and add to the curry and mix gently. Close the pan with a lid and let it cook for about 10 minutes.

Make the patties into small pieces and once the oil oozes out from the sides of the curry, put into it and mix well.add a little water and let it cook for a few minutes.

Once it is cooked, open the lid and sprinkle finely chopped coriander leaves and onion over it.

Serve it hot with appam, idiyappam, dosa or oothappam along with a hot ginger tea.
