Teepi Atukulu /Sweet Poha is an authentic festive delicacy that tantalizes your taste buds with just a few ingredients. It is made of soaked poha or flattened rice mixed with jaggery and cardamom and it is garnished with copra and cashews roasted in ghee.

Generally it is prepared for festivals like jenmashtami, dussera and other festivals as offerings to God and apart from that it is an easy snack that can be prepared in a jiffy as an instant sweet dish that strikes a chord with kids and adults alike. Aval / Flattened rice is a staple in every Indian house and it is the most prefered cereal for a quick morning break fast or a mild evening snack. Though there are quite a few varieties of poha white and red rice poha are the popular ones and are used frequently at homes. This Teepi Atukulu is generally made of white poha and it can be either made with soft type poha or even the hard variety.The copra or the dried coconut used in this dish is highly nutritious that has been used in Indian cooking since several decades.

Though this dish may appear simple and quite easy there are some intricacies one needs to know and you will get the best result only if you follow certain nuances. For example, the trick starts from the choice of poha. You need to choose the thicker variety as soft  poha may tend to become mushy while you soak. And similarly, do not pour water after straining the poha and just a sprinkle would do. Similarly, you have to choose the golden yellow color jaggery and not the darker ones like karuppatti. Achu vellam or urundai vellam serves the best for this dish and you have to heat it with a little water and filter it beforehand in order to remove the impurities. Just a little amount of water will suffice to melt it.

Ingredients Required To Make TeepiAtukulu:

 1 Cup Of Aval/ Poha
 ½ Cup Of Jaggery
 1 tsp Cardamom Powder
 ¼ Cup Of dried Coconut (grated)
 1 tsp Ghee
 10 Nos Of Cashew Nuts
 Required Amount Of Water

How To Make Teepi Atukulu:

1

Take a cup of poha or aval and wash it twice or thrice in tap water and strain it using a strainer.

Transfer it to a vessel and sprinkle a little water and soak it for about twenty minutes approximately.

Place a saucepan in the stove and turn on. When it is heated just tip in a teaspoon of ghee in it.

When it starts melting, add some cashews and saute till golden brown.

Now add the soaked poha into the sauce pan and stir in.

After a minute or two blend in a quarter cup of clean jaggery to it.

Keep stirring for a while until the whole jagerry blends well with the poha completely.

At this stage, add a quarter cup of dried coconut (grated) and stir in.

Finally, sprinkle a teaspoon of cardamom powder and give a mix.

Let it cook in low flame for a minute or two and when it turns aromatic, just turn off the stove.

Now the delicious Teepi Atukulu / Aval Poha is ready to eat.

Serve it for an after school snack or for a tea break along with a savory like vada or bajji.

Some Tips To Follow:

  • Be mindful about the amount of water while soaking. Just a few drops will do and it is enough if you soak for less than fifteen minutes.
  • If you prepare cardamom powder at home, you can add a little sugar while blending the cardamom as you will get a fine cardamom powder out of it. You can strain it using a sieve and store it in your pantry and use whenever needed.
  • You can serve it either chill or warm according to your choice and preference.
  • Usually copra or dried coconut is used to make Teepi Atukulu but you can also use freshly grated coconut. You can thaw the copra by soaking it in hot water for some time as it will be easier for you to grate in this way.
  • It is one of the interesting dishes for the lunchbox and a quick fix evening snack. So you can prepare this on a hectic day when you run short of time.
