An Introduction To Podi Uthappam

Podi Uthappam is a traditional dish which originated from the Indian subcontinent. It is a kind of dosa, but with a variation.

Unlike dosa, podi uthappam is thick and fluffy yet delicious. It can either be made with the regular 'idli dosa batter' or it can be made separately by mixing the boiled rice and urad dhal in the ratio of 1:3.

Nature Of  The Batter 

The batter needs to be fermented more than we do it for ordinary dosa as it gives good result. Well fermented batter creates small pores in the oothappam which helps in creating the fluffiness in it.Traditionally,  the toppings of podi oothappam are made only with onion but now the toppings vary according to our choices and preferences.

Podi Uthappam Speciality 

It's most attractive feature is its appearance. It is round shaped, colorful and has tiny pores in it, which makes it irresistible to eat. Its light sour taste blended with the spicy 'idli podi' and crunchy vegetables enhances the richness of the podi uthappam.

One of the major advantages of preparing a podi uthappam is that it can be prepared within minutes with the ingredients readily available at home. If you have idli dosa batter or separate dosa batter at home then your job is half done. You can even use the leftover batter for this purpose. In South India, you can see people opt for this podi uthappam, starting from top restaurants to roadside mobile hotels. It is popular in all marriages, functions and get togethers as people love to have it along with sambhar and coconut chutney. If you travel across the states of South India, you can see people eating this podi uthappam at midnight in the roadside shops. Thus, it is one of the famous dishes of South India especially in states like Tamil Nadu, Andra pradhesh and Karnataka.

Ingredients Required To Make Podi Uthappam

For the batter
 ½ cup Raw Rice
 ½ cup Boiled Rice
 ¼ cup Urad Dhal
 1 tsp Bengal Gram
 1 tsp Methi or Fenugreek Seeds
Ingredients for the uthappam
 2 Medium Sized Onions
 2 tbsp Idli Podi
 2 tbsp Peanut Podi (Optional)
 1 tsp Coriander Leaves
 2 tbsp Gingely Oil
 2 tsp Red Chilli Flakes

How To Make Podi Uthappam 

Step 1 :

First, let us prepare the dosa batter. Soak the measured quantities of boiled rice, raw rice,Bengal gram and urad dhal together in a vessel with two glasses of water with a tea spoon of fenugreek seeds in it.

Let it soak for 2-3 hours.

After three hours, put it in a grinder and grind nicely.

Add the required amount of salt and let it ferment for a few hours or overnight.

If you already have common idli dosa batter at home, you can also use that to make this podi uthappam.

Step 2 :

Heat a cast iron tava (thick bottomed) and smear a little oil over it.

Wipe the 'dosakal' (dosa tava in tamil) with a sliced onion in order to make it smooth.

Let the dosakal be in high flame.

Once it is heated, take a ladle (karandi in tamil) full of batter and spread it over the tava in a circular shape.

Let it be thick as it is the nature of the uthappam to be slightly thicker and fluffy.

Now spread a spoon of idli podi and a tea spoon of peanut powder over the uthappam and sprinkle finely chopped onion and coriander leaves over it.

Pour a little oil around the uthappam and simmer the flame and close it with a lid.

Let it cook for 2-3 minutes.

After two minutes, just flip to the other side and cook it well.

Now the podi uthappam is ready to eat.

Serve it hot with coconut chutney or a little ghee.

Tips To Follow for Podi Uthappam :

  • To make the peanut powder, just buy roasted peanuts from the shop and put it in a blender and make a coarse powder out of it.
  • If you want to taste the exclusive flavor of  'idli podi'  you can skip the peanut powder.

  • Always choose the iron tava over non-stick pan as it is the traditional way and as well as good for health.

  • If you want you can add vegetables like grated carrot, beans and cabbage.
