Palkova Recipe With Just Two Ingredients / Traditional Palkova From Srivilliputhur

 500 ml Milk (full fat)
 50 g Sugar

Phase 1: Boil The Milk

Heat a large heavy bottomed skillet and pour in half a liter of full fat milk. Lower the flame and start to stir. Stir gently and keep tilting the milk skin towards the middle of the skillet so as to facilitate
the thickening of the milk. Continue the procedure for about ten minutes approximately. Keep scraping the sides simultaneously so that the milk that collects at the brim do not get scorched.

Phase 2: Add The Sugar

When the milk starts to thicken add fifty grams of sugar with a nice stir. Keep stirring as it is an on going process till the end. When both the ingredients starts to mingle, you will see a subtle change of color. Keep stirring in low flame for another ten to fifteen minutes. When the whole mixture gets solid and non sticky, the procedure is done. Turn off the flame when it reaches the right consistency, color and aroma.

Phase 3: Serve Hot Or Cool

Serve it either hot, cold or at room temperature according to your choice and preference, with a nice savory like pattinam pakoda.
