An Introduction To Kavuni Arisi Payasam:

Kavuni Arisi Payasam, a popular rice pudding is the signature dessert of the Chetinad Cuisine much adored for its deliciousness and authenticity.  It is the combination of nutrition and flavour that is made with the blend of Black Rice, Sugar, milk and ghee. It is a traditional practice in the Chetinad Cuisine to serve this  fond delicacy as the first dish in the banana leaf for any wedding, ritual or special occasion and it has been practiced with ardent fervor and pride till date.

Rice has been the staple food of India since time immemorial and this Kavuni Arisi has been in vogue in the Indian Cuisine since several decades. Kavuni Arisi popularly called as Black Rice is grown in certain parts of the country like Orissa, Westbengal, Jhakand, Manipur and Tamil Nadu. It is the best crop for organic farming as it consumes moderate amount of water but at the same time it is labor intensive. Traditionally it was hand pounded and mixed with jaggery and made into balls and taken as breakfast. In the South, this Kavuni Arisi became popular through the trading communities in Chetinad, who exchanged valuable goods for this nutritious Black Rice and in due course it has become the part and parcel of their own cuisine. Apart from being nutritious, it is loved for its striking color, unique texture and exclusive taste and no wonder it is considered as a super food all over the world and our ancestors have been  so brilliant in incorporating such a valuable rice in their daily foods.

Ingredients Required To Make  Kavuni Arisi Payasam Recipe / Black Rice Kheer Recipe

 1 Cup Of Kavuni Arisi (black rice)
 2 ½ Cups Of Milk
 3 Cups Of Water
 ½ Cup Of Sugar
 ½ tsp Cardamom Powder
 5 Nos Of Cashew Nuts
 5 Nos Of Raisins
 1 tsp Ghee

How To Make Kavuni Arisi Payasam Recipe / Black Rice Kheer Recipe

soak And Boil The Black Rice

Take a cup of Kavuni Arisi / Black Rice, wash it thrice and soak overnight or for six to seven hours approximately.

Then transfer the rice to a vessel (along with the soaked water) and pour in three cups of water and pressure cook for about five to six whistles approximately and wait for the pressure to get released completely.

Take out the rice and collect the water in a glass and slightly mash up the black rice using a masher.

Make The Payasam

Now heat a thick bottomed skillet and add this mashed black rice and pour in two and a half cups of boiled milk to it and stir in.

Just after two minutes, add the measured quantity of sugar with a nice stir.

Then add the boiled water (from the glass) and mix altogether and alter the flame to high mode.

Saute The Dry Fruits

Let it cook for a while and besides, saute the nuts and raisins in a small kadai with a teaspoon of ghee and add it to the skillet.

After a minute or two when it turns aromatic and reaches the desired consistency just turn off the stove.

The lip-smacking kavuni Arisi Payasam is ready to eat. Serve it hot as a dessert at any part of the day.

Tips And Tricks Kavuni Arisi Payasam Recipe / Black Rice Kheer Recipe

  • Ensure that the grains are fresh and unbroken and wash it thrice before soaking and it should get soaked for a minimum of about seven hours or overnight.
  • You can adjust the quantity of sugar and milk according to your need and preference.
  • Similarly, you can either use full fat milk or skimmed milk depending on your choice.
  • You can even refrigerate and have it chill as it tastes astounding in both the ways.
  • We need not add extra ingredients to spruce up the dish because the Black Rice will do all the trick. Make it the simple way to enjoy the predominating flavor of Kavuni Arisi.
  • Do not discard the soaked water and use it as a last rinse while you hair wash as it has proven benefits.
