Kalkandu Sadam Recipe

 200 g Kalkandu / Rock candy
 1 Cup Of Raw Rice
 3 tbsp Ghee
 1 Cup Of Milk
 ½ tsp Elaichi Powder
 10 Nos Of Cashew Nuts
 1 Pinch Of Edible Camphor
 1 Tiny Bit Of Nutmeg
 4 Strands Of Saffron

Take a cup of raw rice and add half a litre of milk and a cup of water to it. Place it inside a pressure cooker and cook for three to four whistles and allow it to get warm. Heat a skillet and pour in a litre of full fat milk and when it comes to a boil just squirt in the boiled raw rice with a nice stir. Maintain the flame in low flame and let it boil for about three to five minutes. When the rice gets thicker, just add two hundred grams of rock candy and keep stirring for a while. As the whole mixture gets loose after adding the rock candy, wait for a while to get it thickened.

Besides, heat a small pan and tip in two to three tablespoons of ghee and when it starts to melt, tip in a bit of nutmeg and roast it for a few seconds until it gets aromatic. Take it out and crush using a mortar and pestle and add it to the rice. Also add in some cashews and roast till golden brown. Plop it into the rice along with half a teaspoon of cardamom powder and a pinch of edible camphor. Finally add in a few strands of saffron (after soaking it in hot water or milk) and simmer. Turn off when it turns fragrant and serve either hot or at room temperature.
