Ingredients Required To Make Kalakandu sadham Recipe :

 200 g Kalkandu / Rock candy
 1 Cup Of Raw Rice
 3 tbsp Ghee
 1 Cup Of Milk
 ½ tsp Elaichi Powder
 10 Nos Of Cashew Nuts
 1 Pinch Of Edible Camphor
 1 Tiny Bit Of Nutmeg
 4 Strands Of Saffron

How To Make Kalkandu Sadham Recipe 

Boil The Rice

Take a cup of raw rice and add half a litre of milk and a cup of water to it. Place it inside a pressure cooker and cook for three to four whistles and allow it to get warm. Heat a skillet and pour in a litre of full fat milk and when it comes to a boil just squirt in the boiled raw rice with a nice stir. Maintain the flame in low flame and let it boil for about three to five minutes. When the rice gets thicker, just add two hundred grams of rock candy and keep stirring for a while. As the whole mixture gets loose after adding the rock candy, wait for a while to get it thickened.

Besides, heat a small pan and tip in two to three tablespoons of ghee and when it starts to melt, tip in a bit of nutmeg and roast it for a few seconds until it gets aromatic. Take it out and crush using a mortar and pestle and add it to the rice. Also add in some cashews and roast till golden brown. Plop it into the rice along with half a teaspoon of cardamom powder and a pinch of edible camphor. Finally add in a few strands of saffron (after soaking it in hot water or milk) and simmer. Turn off when it turns fragrant and serve either hot or at room temperature.

Some Useful Observations:

* Any variety of raw rice is suitable to make kalkandu bath and ponni raw rice is much preferred to make this dish.

* We boil the rice in rich whole milk for flavor and richness and it gives the best result especially when we prepare delicacies like Kalkandu bath and Akkaravadisal.

* Either rock candy or cryatalized diamond kalkandu can be used to make this kalkandu bath and both taste similar.

* Nutmeg is used here as a flavor enhancer and in case if you do not like its aroma, you may skip it. But I would personally suggest you to add a little bit of nutmeg for a perfect traditional finish and to get its therapeutic benefits.

* In some versions, they include one or two cloves for added flavor and similarly inclusion or exclusion of saffron is also optional. While you add saffron the kalkandu bath tend to change its color from pearly white to pale yellow which is again an added attraction.

* Adding up of raisins is also optional and if you want the flavor of sugar candy to predominate, be minimal about the usage of dried fruits and flavor enhancers.

* Unlike other sweet delicacies, this kalkandu Bath may not require much of ghee. Just two or three tablespoons will be sufficient to get a perfect finish.
