 3 tsp Coconut (Fresh & grated)
 ½ tsp Cooking Oil

Preliminary Steps To Make Recipe Of Puttu

To make the recipe of puttu, Measure a cup of fine raw rice flour and put it in a broad flat vessel i.e. (thambalam - a huge plate which is wide with brim)

Add half a tea spoon of salt and sprinkle hot water over it.

Keep sprinkling the water little by little to the whole flour till it becomes partial wet overall.

While doing so, keep kneading the flour so gently in order to wet the flour evenly for smoothing the flour to make Puttu recipe.

Just use your fingertips for this process so that you get soft puttu.

The texture of the flour should be granular like that of wheat rava. I just give you this example to check the consistency and the texture of the flour you make. Because this step is important to get good puttu.

Finally, ensure that there are no lumps in it, which would help us to make puttu which is of even texture.

To make puttu, Take the “Puttu Maker” (available in most of the vessel shops in south india as puttu kudam) and pour two or three glasses of water (approximately) at the bottom portion of the “Puttu Maker” and keep it in the stove.

Switch it on and keep it in low flame. Let it get heated for some time.

Meanwhile, take the top part of the vessel which is cylindrical in shape and hollow at the bottom.

Just close the hollow with the `perforated plate` (tiny & round) which will be provided with the maker.

Place it firmly and fill up the hollow.

Now, fill it up with a handful of grated coconut the first layer.

Make the second layer with two handfuls of puttu flour (which we have prepared already) just above the first layer.

Similarly make layers alternatively with the coconut and the rice flour in the ratio of 1:2 to make the puttu.

Fill three fourth of the ‘Puttu Maker’ like wise and close it with the lid provided.

Just ensure that the top portion is filled with coconut before closing it.

By this time, the water would have come to a boil.

Now you fix the top portion of the vessel to the bottom part and close it intact and change the flame to high mode to make puttu recipe.

After 7-8 minutes, the steam will start to come out slightly.

Let it steam cook for about 10 minutes approximately.

Subsequently, the steam will start coming out nicely from the top vent of the cylindrical vessel.
