The Dal Fry recipe is an authentic North Indian dish and finds its place in every home of India, as it is the primary source of protein to all the vegetarians of India.

 2 Nos Onions ( medium sized)
 2 Nos Tomatoes (Big Sized)
 2 Nos Green Chilli
 2 tsp Cumin seeds
 1 tsp Red Chilli Powder
 2 tsp Coriander Powder
 1 pinch Haldi
 ½ tsp Jeera Powder
 ½ tsp Garam masala
 1 Twig Curry leaves
 1 Handful Coriander leaves
 1 tbsp Cooking oil
 Salt and Water as required

To make dal fry, take a cup of arhar dal or tuvar dal and wash it thoroughly and soak for 5 minutes.

Put it in a pressure cooker and add 2 cups of water and add a pinch of turmeric to it and pressure cook it for 3-4 whistles.

Simmer the flame and switch off the stove after 10 minutes.after sometime, when it is cooled, open the cooker and check whether the dal is cooked completely.

Mash it nicely with a masher and keep it aside.

To make dal fry, heat a pan and put a spoon of butter or ghee into it along with a tea spoon of cooking oil. Once it is melted add a spoon of mustard seeds to it.

When it splutters, add a spoon of jeera seeds,2 dried red chillies, a green chilli, finely chopped ginger, and a pinch of hing to it.

Now add the curry leaves and saute it with a spoon of ginger garlic paste.

Stir it slowly and add the measured quantities of spices like chilli powder, coriander powder, garam masala and a pinch of turmeric powder.

At this stage, put the finely chopped onions and tomatoes to it and fry them.

When the onions are translucent and the tomatoes all fully mashed up, add the cooked dal to it.

Pour the required quantity of water, add the required salt and stir nicely.

Check the consistency of the dal and keep cooking in medium flame.It should be neither too thick nor too thin.

If it is too thick, add a little water and make it slightly thin.

If it is too thin, cook it in high flame and thicken the gravy.

When the dal fry comes to the desired consistency, switch off the stove.

Top it up with a spoon of ghee if you desire.

Sprinkle finely chopped coriander leaves over it and serve it hot with roti or rice.

It goes well with chukka roti, naan roti, jeera rice, basmati rice and pulao.
