Soak The Lentils
1

Take the measured quantities of tuvar dhal and chana dhal together in a bowl and wash them well. Soak them in fresh water and keep it aside for 20-30 minutes approximately.

Chop The Veggies
2

In the meantime, wash and clean the beans, green chilies, curry leaves and coriander leaves and finely chop them and keep aside.

Boil The Veggies
3

Take a small vessel (preferably a small pressure pan with a glass lid) and add the chopped French beans to it. Just add a little amount of water (half a glass will do) to soak them and add one or two pinches of salt. Keep it in the stove in low flame and let it boil for five minutes approximately. It is enough if it is cooked partially. Therefore switch off the stove in five minutes.

4

You would not have any water remaining at the bottom. In case, if you have a little water just strain and keep it aside. You can use it to sprinkle while cooking.

Blend The Lentils
5

By this time, the lentils would have soaked well and now strain them using a strainer and transfer them to a blender. Just add ten dried red chillies and a teaspoon of jeera seeds to it. Blend them into a coarse paste while adding the required amount of rock salt to it.

Steam The Lentil Patties
6

Take the idli cooker and pour two glasses of water at the bottom and keep it in the stove in high flame. Grease the idli plates with a little oil.

7

Make a few flat patties out of the coarse paste of lentils and keep it in every mould of the idli plates and keep it inside the idli cooker.

8

Let it steam cook for 10- 15 minutes approximately. When it is done, just switch off the stove and take the plates out.

9

Take out the lentil patties from the idli plate and place them in a bowl and let it cool for some time. After a while, keep it in the freezer for ten minutes.

10

After some time, take it out and crumble them nicely using your hands and just blend it again for a few seconds to make the crumbles even.

11

Now the lentil mixture is ready to make the usili.

Temper The Ingredients
12

place a kadai in the stove and keep it in medium flame.

13

When it is heated, add a teaspoon of mustard seeds to it. When it crackles, just add half a teaspoon of cumin seeds and stir well. Then add a quarter teaspoon of urad dhal and when it turns slightly brown add a tiny bit of asafoetida (solid) to it.

14

Finally, add a two dried red chillies (roughly torn) along with one or two pinches of curry leaves.

15

When it starts spluttering, add the crumbled lentil patties which you have prepared before and stir well.

16

Now adjust the flame to medium mode and close the kadai with a lid.

17

Let it cook for a while, add after two or three minutes, just open the kadai and you will see that the lentils have been cooked up completely.

Add The Beans
18

At this stage, just add the boiled French beans to it and mix everything well.

19

Lower the flame and sprinkle a little water if necessary and mix well.

20

You need not add salt because it has been added both in the beans and as well as the lentils.

21

Let it continue to cook for five to eight minutes approximately in low flame.

22

In between, just open the lid and add some freshly grated coconut to it and mix everything well and close it again.

23

After a while, when you open the lid you will get a nice aroma coming out of it and you will see that the paruppu usili is well cooked up.

24
