Ingredients For Avial Recipe Preparation

 2 cups Coconut
 1 cup White Pumpkin
 1 cup Yellow Pumpkin
 1 cup Cucumber
 ½ cup Carrot
 ½ cup Beans
 ½ cup Unripe Banana
 1 cup Yam
 1 cup Curd
 2 tsp Coconut Oil
 1 tsp Jeera
 1 pinch Pepper Powder
 1 pinch Turmeric
 1 cup Curry Leaves
 4 Green Chillies
 Salt and Water as required

How To Make Avial - Initial Preparation

To make avial, Grate two cups of coconut and grind it into a coarse paste along with a pinch of pepper powder, a spoon of jeera, 4 green chillies and keep it aside.

Wash all the measured quantities of vegetables and cut it lengthwise into long even strips. See to it that all look uniform in size and now you get a colourful combination of veggies which are ready to get cooked to make avial recipe.

Boil all the vegetables in a broad vessel with enough salt and water.sprinkle a pinch of turmeric powder while boiling. After 8-10 minutes the vegetables get fully cooked. Now to make avial simmer the stove and add the above prepared paste to it. Mix it well and allow to cook for 5 minutes.

When the vegetables and the coconut blend together, add one cup of curd and mix everything well to make avial.

Finally season the avial with mustard seeds, cumin seeds and curry leaves in coconut oil. Pour a tablespoon of fresh cream over it and switch off the stove.
