Here comes a mouth-watering and a nutritious meal straight from the Indian kitchen "Ash gourd paratha" which is exotically luscious, super soft and sheer unique in its own way..Dip it in a cup of dahi and give yourself a soul satiating treat and enjoy the benefits of this humble vegetable Ash gourd...
Add a cup of wheat flour in a bowl and tip in a little salt. Splash in 3/4 cup of water and make a smooth dough. Knead further with a teaspoon of ghee for a minute or two and close the bowl with a damp muslin cloth. Meanwhile, make the stuffing for it.
Heat a saucepan and spill in a little ground nut oil and throw some cumin seeds into it. When it splutters, add the above mentioned spice powders one by one and saute for a few seconds in low flame. Plop in the grated ash gourd and sprinkle the required salt.
Finally, strew in some chopped coriander leaves and stir in altogether for a minute or two. When it becomes fragrant turn off the flame and let it cool for a while.
Take a small portion from the dough and make regular roti base using a chakla belan. Simiarly, take a small lemon size portion of the pumpkin filling and fold the edges of the roti and roll again like a roti. Dust wheat flour in between. Similarly, make all the rotis and keep aside.
Heat a tawa and topple up a stuffed roti base and smear a teaspoon of oil around it and let the flame be in medium mode. Just after a minute or so, flip up the roti to the other side and dab a little more oil. When it is evenly done on both the sides, take it off from the tawa and place it over a plate covered with a paper towel. Similarly, make the other rotis and just stipple a little ghee over every white pumpkin roti and place it in a roti box.
Now the power packed ash gourd paratha is ready. Serve it hot with dal baati churma and fenugreek leaves raita.
